Rügen – Markjordbær

Rügen is an old German-bred alpine strawberry variety with a level of production that is almost difficult to believe until you have seen the plants in full swing.

For more than two months, they produce enormous quantities of delicious fruit – and “small” is actually a relative term when it comes to Rügen. These must be among the largest alpine strawberries around, while still having that wonderfully intense, aromatic flavour that makes wild and alpine strawberries so distinctive.

But Rügen has one fairly significant challenge:

When properly ripe, the berries are extremely soft.

So soft, in fact, that simply picking them in the usual way can almost squash them flat. On our farm, we therefore harvest them with scissors, cutting each berry with its green cap and a short piece of stem still attached. This allows us to handle the fruit as little as possible and gives the delicate berries the best chance of reaching the customer intact.

In other words, this is not a berry you send on a long journey and expect to see again in quite the same condition.

But perfectly fresh?
